The Pyrenees region of Western Victoria is well known for producing red wines with great colour, body and richness. Grown in the right way, these grapes can also produce full-bodied, complex fortified wines. This 2008 wine is in the late-bottled vintage port style. This means it can be consumed immediately and does not require extended cellaring.
Region: Pyrenees 100%
Composition: Cabernet Sauvignon 100%
Harvest date: 24 March
The 2008 season was drier than normal but some good spring rainfall allowed the vines to withstand the rigours of a dry summer. Small berry size gave high “skin to juice ratio” resulted in concentrated flavours in the finished wine. One block of Cabernet Sauvignon was selected and harvested 10 days later than the fruit for our table wines.
Picked when the flavours and sugars were at their peak. Fruit was transported to the winery, crushed and primary fermentation on skins commenced. Fortifying spirit was added to arrest fermentation after four days. The resulting port wine was matured in large oak casks for 8 months prior to bottling.
Alcohol: 19.5% pH: 3.65 T/A : 6.4 g/l
Deep, intense ruby appearance
The bouquet shows fruit-cake, plum conserve and some lift from the brandy spirit used in fortification. The palate is very smooth and balanced. Sweetness is apparent but not excessive, tannins support the palate and the finish is mellow. The fortifying spirit has integrated well, giving the wine an appealing drinkability.
